1. Per la prima massa, sbattere semplicemente 5 albumi a neve molto ferma, mescolare con lo zucchero e quindi incorporare fino a ottenere una massa a neve ferma.

2. Per il 2° impasto: mescolare 5 tuorli, 2 uova, lo zucchero a velo, la farina in un impasto sciolto di pan di spagna.

3. Distribuire poi le strisce alternate bianche e poi gialle di entrambi gli impasti, una accanto all’altra, su una teglia rivestita di carta da forno oppure contornarle con una bocchetta da pasticceria e cuocere in forno preriscaldato a 170 gradi per circa 30 minuti.

4. Dopo il raffreddamento si toglie la carta e si tagliano con cura le strisce di pasta.

Spargeteli densamente con la marmellata di albicocche e poi ricopriteli con un composto di panna montata aromatizzata con caffè solubile e zucchero vanigliato.
